Extra Green Goddess Dip

Description

Green Goddess Dip is one of my favorite snacks to make because it’s so healthy, modifiable, and flavorful. This dip is EXTRA green because we add spinach!


Ingredients

Scale
  • 1 ½ cup plain greek yogurt
  • zest & juice from ½ lemon
  • 1 small garlic clove (seriously don’t use a big one)
  • 2 anchovies or 2 tablespoons kalamata olives or capers
  • 2 tablespoons olive oil
  • 1 teaspoon honey
  • ¾ teaspoon kosher salt
  • several grinds of fresh pepper
  • 2 handfuls spinach
  • 2 cups fresh herbs of your choice; use them all or just a few: 
    • dill
    • mint
    • basil
    • cilantro
    • parsley
    • chives
    • tarragon

Instructions

  1. Put all ingredients in a food processor or blender and blend until smooth.
  2. Taste and adjust ingredients as necessary. 
  3. Serve with cut up veggies for dipping or toss over salad.
