Salmon Gyros with Crunchy Veg & Tzatziki

Slow-roasted salmon dry rubbed with gyro seasonings, crunchy veggie salad, and loads of creamy tzatziki on a pillowy pita bread. (Or a bed of lettuce!)




  • 1.5 lbs salmon fillet (wild if it’s available!)
  • olive oil
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon oregano
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • ½ teaspoon paprika
  • ¼ teaspoon thyme
  • teaspoon cinnamon
  • teaspoon nutmeg


  • 1 cup plain Greek yogurt
  • 2 tablespoons fresh dill, chopped
  • 1 clove garlic, grated
  • 1 small snacking cucumber or ¼ of an English cucumber, grated
  • cup crumbled feta
  • juice of ½ lemon
  • salt & pepper, to taste

Crunchy Veg Salad

  • 1 pint cherry tomatoes, halved
  • 5 snacking cucumbers or ~ ½ of an English cucumber, diced
  • 1 bell pepper, diced
  • 1 small shallot, diced
  • cup kalamata olives, halved
  • juice of ½ lemon
  • salt & pepper, to taste


  • pita bread or mixed greens!


  1. Preheat the oven to 250° and grease a baking sheet with olive oil. 
  2. Combine all salmon spices in a small bowl. Pat salmon dry, then rub with spice mix. Place salmon on baking sheet, skin side down. 
  3. Bake salmon for 22–28 minutes, (depending on how thick the salmon is) until salmon flakes easily with a fork and the thickest part isn’t gooey looking in the middle. 
  4. Meanwhile, combine Tzatziki ingredients in a medium bowl. Then combine Crunchy Veg Salad ingredients in a separate bowl. 
  5. Put it all together! Flake salmon pieces into your pita (or onto a bed of greens to make a salad) with a big scoop of Crunchy Veg and top with Tzatziki. Enjoy!
