Air Fryer Shrimp Cakes with Cilantro Lime Mayo

Description

These shrimp cakes are made with jalapeño, corn, green onions, garlic, shrimp and bread crumbs—that’s it! Crisp ’em up in your air fryer or use your oven or stovetop for an easy app or dinner.

Jalapeño Corn Shrimp Cakes

  • 2 cloves garlic
  • 1 lb raw shrimp, peeled and deveined, divided
  • 1 cup corn, divided
  • 1 jalapeño, seeds and ribs removed if you want less spice
  • 3 green onions, white and light green parts
  • 1/2 cup bread crumbs
  • salt & pepper

Cilantro Lime Mayo

  • 1/4 cup cilantro, chopped
  • juice of 1/2 small lime
  • 1/4 cup mayo
  • 1 clove garlic, grated or finely minced
  • salt

Instructions

  1. Pat shrimp dry and if you are using frozen corn, defrost it and get rid of extra liquid. Preheat your air fryer to 400° if using. 
  2. In a food processor or blender, add 2 cloves garlic and blend until the garlic isn’t flying around anymore. Then add about half of the shrimp (½ lb), ½ cup corn, the jalapeño, 3 sliced green onions, salt & pepper, and puree until it’s a thick paste.
  3. (See note if using a blender) Add the rest of the shrimp (½ lb) and corn (½ cup) and pulse just a few times until shrimp is cut into large chunks.
  4. Transfer mixture to a large bowl, add ½ cup bread crumbs, and stir to combine.
  5. Form 8 patties—they’ll be about cup each. 
  6. Air fryer: Air fry 4 patties at a time at 400° for 7 minutes. Stovetop: Heat a tablespoon or two of oil in a pan on medium-high heat, then sauté 2–4 patties at a time for about 3–4 minutes per side. Broiler: Spray a baking sheet with cooking spray, then place all patties a few inches apart. Broil for 3–4 minutes, then flip and broil the other side. All broilers are different and some are CRAZY HOT so keep an eye on it! 
  7. While patties are cooking, make the Cilantro Lime Mayo. Take the measurements as guides, not rules, and follow your taste buds. Add all Cilantro Lime Mayo ingredients to a small bowl and mix until combined. Taste and adjust as necessary. 
  8. Serve Shrimp Cakes with Cilantro Lime Mayo on the side and enjoy!

Notes

  • If you are using a blender that only has blades at the bottom, it might be better to chop your remaining shrimp separately in step 3, then add chopped shrimp & corn to the bowl in step 4. You’d do this to prevent the shrimp from also turning into paste because we want those nice big chunks. A food processor or blender with blades all up the middle can give you the chop we want pretty well but a less powerful blender may just turn it all into mush and then patties will be too wet.
